Dominique Peyron, from the Jules Guyot Institute, University of Burgundy, came to present his work on phenolics, their extraction and stabilization in wines. Gérard Michel, chemist, manager of  Vect’oeurs laboratory, specialized in detecting molecules causing  aromatic deviations (cork taint, barnyard taint, earthy mouldy taint and so forth), showed us some treatment solutions. We also had Françoise Vannier-Petit, geologist from the University of Burgundy, who worked on the identification of the Terroirs of Burgundy.”
